Easy and Versatile Veggie Skillet Meal

I want to share a quick and easy recipe I use frequently. This recipe can be altered to meet your dietary needs or tastes.

​1 bag frozen veggies (I have used mixed vegetables, stir-fry veggies, etc.)
​1/2 to 1 pound chicken (I have used the chicken when they were ground or cubed.)
​Chicken Stock 
Seasoned Salt
Pepper
Onion and/or Garlic (optional)
Pasta or Rice, cooked

​Brown meat in skillet with onion and seasonings.  Add garlic after the meat is about half-way cooked.  Add frozen vegetables.  (I usually forget to thaw out the veggies.)  Stir.  Add enough chicken broth to almost completely cover the veggies and bring to a boil.  Then, reduce heat to a simmer and cover.  Cook for about twenty to thirty minutes or until the vegetables are tender.  While you are waiting, cook past or rice according to package directions.  Serve the vegetable and meat mixture over pasta or rice or just eat by itself.  Enjoy!

Variations:
​Use beef (ground or cubed) and beef stock when preparing.
​Use pork (either ground or cubed) and chicken or vegetable broth.
Use no meat and just vegetable broth.

​Seasoning variations:
Taco Seasoning, Cajun Seasoning, Creole Seasoning, Chipotle Seasoning, Italian Seasoning

Medicine Woes

  • We have a hard time getting our children to take oral medications.  Two of our kids are especially sensitive to taste and texture.  Here are some ideas I have tried in the past to get them to take their medicine.  Our pharmacist was impressed by one and was going to recommend it to her other customers. LOL

    Mix with 1 to 2 ML of juice, koolaid, etc.

    Mix with ice cream or yogurt.

    Mix with chocolate, strawberry, or caramel syrup.

    Mix with Jell-O, pudding, or applesauce.



***Please check with your pharmacist first to make sure there will not be any kind of reaction between the medicine and the food item.  We have not run across that problem yet.  If you have any other ideas, please share them with us!

Counting for Calmness

I have found that counting comes in handy with helping our son to stay focused and to wait for something he wants.  We count when we get into the car seat, when we are trying to do something he does not want to do, and when he is waiting for a drink.  We count down when he needs to settle himself for an activity.  Counting sometimes works when he starts getting out-of-sorts, especially when we are driving in the car.

Bubble Trouble

Our son loved bubbles in his bath up until a week ago.  Now, he wants to play with the bubbles but doesn't want to have them touch him unexpectedly.  Our OT came up with the idea of putting the bubble bath into a bowl or other container and filling it with water.  Then, we place the bowl in the filled bathtub.  Now our son can play with the bubbles and control how often they touch him while he plays with them.  This idea has worked wonders for our bath time!!!

dairy-free buttery spread

We have found a dairy-free butter alternative!  It's called Earth Balance Natural Buttery Spread.  It is no soy, vegan, gluten-free, lactose-free, non-GMO, and has no soy.  We found it at a natural foods store in our area

Milk alternative

If you are searching for a milk alternative for your lactose-free diet, you might want to give almond milk a try.  My kids love it!  They prefer it over soy milk.  The flavors I have found are vanilla, chocolate, unsweetened vanilla, and original.  I use it in my cooking, too, and no one can tell the difference.

New lactose-free cheese shreds

If your child is lactose intolerant, we have found a cheese alternative that is lactose free.  It’s called “Veggie Shreds” and is kept in the produce section in the local supermarket.  Our daughter loves it and I honestly couldn’t tell a difference when I tried it.  It melts well, too.

Consistent Interaction

I do my best to make sure my son does not go more than a couple of minutes without some type of interaction.  Even if it’s just calling his name, I do something to get him to focus on me so he stays attuned with his environment.

Structured Activities Lead to a Better Day

I found that engaging my son in structured activities helps him to have a better day (if he can handle the interaction).  Engaging him in activities that are similar to what he experiences in therapy helps to reinforce what the therapists are doing with him while providing quality emotional experiences for the both of us.  We will work on puzzles, stringing beads, completing the shape sorter, pulling apart pop-beads, handling play-dough, or calling out the name of pictures on flashcards.  These activities also will usually settle my son down if he becomes over-stimulated.

Feeding a Picky Eater

Our toddler has major food aversions and will not eat most foods.  I try to keep a bowl of dry cereal, graham crackers, or grapes with his reach during the day.  On some days I can’t get him to the table to eat, so this method ensures that he will at least snack during the day.  We supplement with a pediatric vitamin drink to provide him with the calories and vitamins his body needs.
