Easy and Versatile Veggie Skillet Meal

I want to share a quick and easy recipe I use frequently. This recipe can be altered to meet your dietary needs or tastes.

​1 bag frozen veggies (I have used mixed vegetables, stir-fry veggies, etc.)
​1/2 to 1 pound chicken (I have used the chicken when they were ground or cubed.)
​Chicken Stock 
Seasoned Salt
Pepper
Onion and/or Garlic (optional)
Pasta or Rice, cooked

​Brown meat in skillet with onion and seasonings.  Add garlic after the meat is about half-way cooked.  Add frozen vegetables.  (I usually forget to thaw out the veggies.)  Stir.  Add enough chicken broth to almost completely cover the veggies and bring to a boil.  Then, reduce heat to a simmer and cover.  Cook for about twenty to thirty minutes or until the vegetables are tender.  While you are waiting, cook past or rice according to package directions.  Serve the vegetable and meat mixture over pasta or rice or just eat by itself.  Enjoy!

Variations:
​Use beef (ground or cubed) and beef stock when preparing.
​Use pork (either ground or cubed) and chicken or vegetable broth.
Use no meat and just vegetable broth.

​Seasoning variations:
Taco Seasoning, Cajun Seasoning, Creole Seasoning, Chipotle Seasoning, Italian Seasoning
